Cilantro and mock Chipotle Cilantro and Lime Rice

Look at the beautiful bunch of cilantro (Chinese Parsley)!
I picked it from Mike's mom's garden of cilantro!

We have to look up other recipes that call for cilantro so that it does not all go to waste. 
Mike and I decided to make our version of Chipotle's cilantro and lime rice.  We cut down the cook time by pre-cooking (slightly undercooking) the rice in a rice cooker.
Cilantro and Lime Rice
3 cups uncooked long grain rice
Bunch of Cilantro, finely chopped (~1/4 c chopped)
Juice of one medium lime (~2-3T of juice)
Salt to Taste

Directions
Wash and cook long rice in rice cooker.  Follow normal directions, except reduce the amount of water a little. I used 2 3/4 cup water for 3 cups of rice.
Mix in chopped cilantro and lime juice. Lightly stir and fluff rice. Add salt to taste.
Here's a picture of the complete dinner. Cilantro and lime rice, black beans, and sausage.  I overcooked the beans so they were a little mushy.
