I just cannot find enough hours in the day to post on this blog.
I am in the classroom or lab for over 20 hours a week, I am slated to work my part-time job for 20+ hours a week, and this is not including the crazy commute time of Oahu traffic. Teaching two college courses also means grading and creating curriculum. I think that it takes up a bunch of my time because I care too much and I want my students to learn as much as possible. Then I choose to spend my free time playing with my daughter and getting her ready for the day and night.

Maybe I'll post once every couple of months (if you use a Reader, it will be easier to see if a sporadic post pops up). Maybe I'll switch to Tumblr and post random notes and pictures of food. Maybe I'll just post pictures of the food that my students cook in class because I certainly have not been cooking or baking very much. Mike has been stepping it up and our daughter probably will be a bit confused on stereotypical gender roles. She'll tell her classmates, "No, daddy has a full time job, yet he cooks and cleans too." So can you see why I do not have free time? If I did, I would try to help Mike out a bit more.

Although this past January has been super duper busy, I think it may get worse or at least a bit more er...challenging. A new opportunity has fortuitously been thrust my way and I really think that I could help Hawaii out... and it's related to food and people.

On a personal front, there are new adventures in store for us...2014 might be the year that we make a big purchase....here's a hint, it rhymes with "mouse."(yeah, cheesy I know). I am very fortunate to be given these opportunities and am super stoked at what is in store for the rest of the year. Lots of new changes and things to look forward to.genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com3tag:blogger.com,1999:blog-341575474618571406.post-72160948175156996942013-12-08T16:54:00.003-06:002013-12-08T16:54:37.509-06:00Long HiatusWhoa! It's been exactly two months since my last post. Blogging and keeping up with others blog posts has gone to the wayside due to the new job, my other job (I own my own business and am a registered LLC), and taking care of the little one who is not so little anymore (16 months old!).
In about a week and a half I will have survived my first semester teaching at the University (8 credits!) and will have about a month of downtime to enjoy the holidays, prep for next semester, CLEAN, and start all the things on my "To Do" list that I have been putting off for the past few months.

Unfortunately for this blog, it seems like 2014 will be even busier than these past few months. I'll be teaching at both the University and a community college in the Spring. Fortunately for me, my jobs are exciting and allow me to interact with students and cook in kitchens. How about that? My "second career" (I consider my job in Texas my first career) still allows me to work with food and people! genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com3tag:blogger.com,1999:blog-341575474618571406.post-48340203445345152792013-10-08T19:53:00.000-05:002013-10-08T19:53:00.114-05:00Hawaii Restaurants~Corner Kitchen

Now that I work in town, I tend to stay in town until traffic dies down. What better way to spend my time than meeting up with friends for dinner? I met up for one of my good friends from college and ate at Corner Kitchen in Kapahulu (since I had a groupon coupon).

Chicken Katsu Curry and Rice. This is probably the most crispy chicken katsu that I had in a while. Yum!
We ordered a sampler platter that contained a spicy tuna roll, cory-en spicy chicken, and spicy shrimp. Spicy Tuna Roll. Meh. We did not finish this plate. :( We thought that the sushi would be tasty here since there are two pages on the menu devoted to sushi, but based on the spicy tuna sushi, we decided to try other sushi.
Miso Butter Ramen. The ramen was okay. I think that this dish was tasty but I think ramen shops with the word "ramen" in their name taste much better.

Overall, we thought the food at Corner Kitchen was just okay. Nothing was really memorable, but maybe we just ordered the wrong items. When we left the restaurant, it was kind of crowded. I think it was partially because there is free live music at 6:30pm, but we opted out of listening to music, so that we could chat and catch up.
We decided to end the night by walking over to Corner Kitchen for some frozen slush float. I had the strawberry slush float and my friend had the root beer slush float (I chose for him). They were both tasty, but we both enjoyed the strawberry one the most.

A couple of weekends ago, Mike and I had brunch with my parents at Sweet E's Cafe. My mom chose to go here for her birthday and what a great choice.
Reviewers on Yelp.com recommended the corned beef eggs benedict and the blueberry and cream cheese stuffed french toast, so that's what we ordered and shared.

Kalua Omelet-Kalua Pig, Ham, Monterey Jack Cheese, onions, and tomatoes. I think I am going to start putting monterey jack cheese in my omelets instead of cheddar. It makes a big difference.
Corned Beef Hash Benedict

Everything was so tasty! It was funny, each of liked dishes that others ordered. My mom thought the Extreme Mess was the best, I liked the kalua omelet with the monterey jack cheese, and Mike enjoyed the corned beef hash eggs benedict the best.

Everyone enjoyed the Extreme mess. It contained hash browns, cheese, bacon, breakfast sausage, bell peppers, onions, ham, eggs, I just did not care for it as much as everyone else because I do not like breakfast sausage.

I'm not a big breakfast food fan, but I'd go back in a heart beat!
Yay us! We have made it through five years of dating, five years of marriage, and are still going strong! Wow, that's 10 years! Our little family keeps growing...in 2011 we introduced little Butters our dog and then in 2012 our little baby girl. She already turned 1 year old, so now she's just our "little <strike>baby</strike> girl."
I often tell Mike that marrying him was the best decision in my life. It's true. I some how lucked out and found the guy that I was meant to spend the rest of my life with at such a young age (we met in high school but did not start dating until college). We had a rough few years of doing the long distance thing, but I think that made our relationship that much stronger.

He's my best friend and a wonderful daddy to our little girl! He is also a great husband who cooks, cleans, and tickles my back to help me fall asleep. Thank you Michael for loving me for all these years! I love you! Here's to many more years!genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com2tag:blogger.com,1999:blog-341575474618571406.post-36053143902887312542013-08-07T23:36:00.000-05:002013-08-07T23:36:00.592-05:00Salads

One of my best friends and I met up for Happy Hour at the Monkey Pod Kitchen in Ko Olina. The restaurant had a nice laid back ambiance and there was live music in the outdoor bar area. The Happy Hour consisted of $9 pizzas (Regular Price $14-18) and half off most appetizers (Regular Price $6-14). There are also drink specials, but I rarely drink and I was there with one of my pregnant friends.
I searched Yelp.com for suggestions on what to order and also relied on my friend's previous dining experience at the Monkey Pod. Here are the dishes that we shared:

Peanut Butter and Jelly Bars! Doesn't that sound delicious? I wanted to make a kid-friendly snack (assuming that the kids were not allergic to peanuts) and so I googled "peanut butter and jelly bars." I used this recipe as my base and went with it. I did not have buttery crackers, so I just added a bit more more butter and flour.

Drop clumps of peanut butter cookie dough on top of the grape jelly. Bake at 325F for 20 minutes.

I bit too soggy for my taste, but the sogginess was expected since the jelly has a lot of moisture and was heated in the oven when I baked the second layer of peanut butter cookie crumble. I'm not sure if I would make this again. If I did, I would aim to make a crunchy bar. genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com0tag:blogger.com,1999:blog-341575474618571406.post-40793777849629050392013-07-14T17:50:00.000-05:002013-07-14T17:50:00.426-05:00Our Garden

After we moved back home to Hawaii, we have not been eating burgers. The other week we met up with some friends at Teddy's Bigger Burgers at the Westridge location.

I had the plain 5oz burger because I'm a burger purist and I wanted to compare burgers to burgers. For example, how do you know which ice cream shop is the best if you try different flavors at each place. I've heard that you should compare vanilla ice creams to determine ice cream quality, but I like to compare Cookies and Cream flavor because after all Cookies and Cream is VANILLA ice cream with some extra cookie bits mixed in.
Whoops, we are talking about burgers today, not ice cream.
So I tried the plain burger.

Mike tried the Volcano Burger which is a Specialty Burger. It is composed of a hot sauce, jalapeno peppers, and cheese. I took one bite and it was a little too spicy for my taste, but Mike loved it.
I have not tested this theory, but I am guessing that if you order the small order of fries or onion rings you will receive the same amount as ordering the large order of either.
We ordered a large fries and a large onion rings, but really, it comes in the basket with your burger, so the amount of fried goodness is limited by the remaining space in the basket.

One of my friends gave me a box of assorted macarons. I did not catch where she bought them from, but they were delicious! They are probably the best that I have tasted from Hawaii.
She has refined taste and "tsks" at us if we say that we want to eat lunch at McDonald's or Zippy's. I do not think that we have ever eaten at a restaurant that served food in styrofoam containers with his Aunty.
A couple of months back, she said that she wanted to go to her favorite restaurant, "Orchids" at the Halekulani hotel. Apparently Mike's aunty frequently dines there because every staff member at the restaurant and the valets knew her by first name. Wow! I guess Mike and I do not frequent places enough for staff to know us.
Here's a macro shot of the burger . Mike's aunty always orders this burger because it's so good!
I can see why Orchids is Mike's aunty's favorite restaurant. The service was impeccable and the food was delicious. I do not think that Mike and I will be frequenting Orchids with our current budget, but maybe one day in the far far future...

My grandma used to make boiled soybeans as a snack. They are slightly crunchy and similar in texture to crunchy boiled peanuts. Soybeans are low in fat and a good source of protein.

Soak dry soybeans for a couple of hours.

Boil the soaked soybeans for about 15-20 minutes until the beans taste cook and are only a slight bit crunchy. Sprinkle a little salt on the top and enjoy. genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com2tag:blogger.com,1999:blog-341575474618571406.post-22809694320490377342013-05-30T14:10:00.001-05:002013-05-30T14:10:22.938-05:00Goat Cheese, Scrambled Eggs, Spinach, and Honey Burritos

Back when Mike and I were living in Texas, we tried Good 2 Go Tacos and loved the Honeybear Taco (link to my old post). We finally tried to recreate the taco at home.

Here's the spread-goat cheese, scrambled eggs, spinach, bacon, honey, and spam (I'm not sure why Mike cooked spam, but we have spam with the meal).

Here's all the fillings of my taco. Mmmmmm....the tacos were pretty tasty, but the tacos from Good 2 Go Tacos were much better. The tacos we bought probably were more tasty because 1) there was a lot more filling; 2) there was a lot more grease; and 3) it contained a much higher quality bacon than the Farmer John's Thick Cut Bacon that we used. I think we have to buy Wright's bacon or that thick slab cut bacon from Sam's Club next time.
Okay this idea is probably a couple of years old, but still I like how it looks and made these for a friend's baby shower.

I bought some pearly pink Sixlets. Remember Sixlets? The round candy coated chocolate pieces? Now they come in pearly iridescent colors perfect for wedding favors. I bought mine online from Hobby Lobby (sold for about $5.99 a bag), but then found out that it was being sold at local Price Busters for $3.50 a bag. Darn darn darn. Oh well, next time I will purchase them from Price Busters.

I also bought some regular pink sixlets.

Then filled this 8"x1" bags with the candies and tied a little ribbon bow on top. Below here's a picture of some pastel M&M's in the bag. It's such an easy favor.
Here's a good use of those Asian hanging laundry drying holder (was that a good description?).

Our baby girl was drooling so much and going through TONS of bibs each day, so this is how we dried them. Mike's mom came up with this idea. Isn't it genius? We could then dry out her cloth bibs so they did not get all stinky and have that "wet dog" smell before we had time to wash them.
The other weekend we celebrated Mike's grandparents 90th birthdays! We had a Sushi Man come over to Mike's aunty and uncle's house and he and his wife prepared sushi-to-order and other Japanese food.

Well, at least that's what I heard her call it. I thought, what a cute name for a pastry.

I searched "snow puppies hawaii" online and then realized that these cream filled Napoleon-like pastries are called, "Snow Puffies."

These are so airy and not too sweet. I'll have to remember to stop by this bakery if I am ever on this side of the island again.
I did not realize how many items we have received and/or purchased for our little baby.

Ergo Carrier I have to agree with the reviews. The Ergo Baby Carrier is probably one of the best carriers out there. Mike and I also have a Snugli (very little support), and a Baby Bjorn Active, but the Ergo does the least amount of damage to your back and it feels like the baby is not going to fall out.

I prepare baby food for our little girl and enjoy using this silicon ice cube tray because the cubes of food pop right out.

Crib Sheet Protector
We have the Summer Infant Crib Sheet. Other brands might be just as good. I like it because instead of lifting the whole mattress to change the bed sheet each time our baby's diaper might leak, all we have to do is unsnap the crib sheet protector and wash that.
We had some extra bed protector sheets from when we were house training Butters. (We did not buy the puppy pads for Butters, we bought the pads used for humans). We bought these pads in bulk at Sam's Club and pack them in our diaper bag. Just think how dirty the changing tables in public restrooms are. Instead of placing a fabric diaper pad on the table, we place one of these pads on the table and dispose of it.
They are a bit pricey at ~$35 for a pack of four, but sometimes they can go down to $25 on Amazon. There seems to be a lot of hype about these blankets, but I like how soft and large these blankets are. I did not like them initially because they were too large for our tiny baby, but by the time she was about 10 lbs, we started using these swaddles more.

Mike and I have enjoyed all the presents we received from people for our baby girl. I finally have gotten around to posting about our favorite baby items. So if you are going to a Baby Shower and need gift ideas or if you are an expectant parent creating your Baby Registry, here's some ideas.

This mini pack was recommended by the nurse who was teaching classes at the hospital. You never know what your newborn will be allergic to, so why buy a Costco/Sam's Club size of shampoo/lotion? Buy the travel size first and then test it out on your baby before you commit to a year's supply.
We received this pacifier as a gift and I first thought, "Wow, do we really need a pacifier with a mini Beanie Baby type stuffed animal on it?" YES. It was great when our baby was younger and the weight of the stuffed animal helped to keep the pacifier in her mouth.

Then she got a little older (4+ months) and figured out she could pull the pacifier out of her mouth by tugging on the animal. But then she outgrew that stage and started feeling around her crib for the stuffed animal and then maneuvered the pacifier to her mouth.

We now have two of these things. I purchased another one at ~$13 and I still think it was a good investment. Especially when I view our baby in the baby monitor and she sits up, cries, finds her pacifier and soothes herself to sleep. I think she also likes to hold the stuffed animal portion and "pet" it.

Here's our healthier version of Chipotle's burrito.

Since I was in charge of the meal, I cut down some of the fat in the dishes. Mike said that it was not like Chipotle's meat because Chipotle includes all the extra fat in their meats, while I try to pull off all the excessive fat chunks.
Crock Pot Carnitas. I found a Chipotle barbacoa recipe online and then used it on some boneless pork shoulder roast (pork butt is on sale at Times for $1.89/lb until 5/7/13 but I used the Safeway Price Match to buy the pork shoulder).

I read an article in February 2013 that mentioned that Sushi Bay was under new ownership and the owner had ties with KuruKuru Sushi. I convinced Mike's parents that we had to check it out. There is always a long line at the Pearl Kai Shopping Center's KuruKuru Sushi, so we made the drive to Kapolei to avoid the lines.
Here's a picture of the spicy salmon bowl at Sushi Bay ($8.99). They also sell a mini bowl for $4.80 (purple plate price) which does not contain the pieces of fish and is in a smaller bowl. I think the small bowl is about the same size as the current Kurukuru bowl. This is a picture of the "old" kurkuru" bowl for comparison. I do not have a picture of the current Kurukuru bowl.
I made some mini lemon bundt cakes in the past, but gave my mini bundt cake pan to a friend when we moved back home to Hawaii.
What do you think? Can I now start a bundt cake business? Just kidding...
On a side note, I am starting to think that the Jello brand instant pudding formulation has changed. I do not recall the batter being so thick and sticky. I baked the cake anyway and I felt that it was not as fluffy as cakes I had made in the past. I then made a rum cake (with cake mix and instant pudding) and the batter was sticky again. I ended up adding an extra 1/2 cup of water than what the recipe called for and it turned out fine.
A couple of years ago, Chef Susan Feniger was competing on Top Chef Masters. I thought that she was hilarious and enjoyed watching her. She made a dish called "Kaya Toast" and I've wanted to try it or make it ever since then.
I thought that the toasted sandwiches with the coconut jam were tasty and liked it even better when it was dunked into the fried egg and soy sauce mixture. I would eat this dish again, but I felt that it took so much work to make the curd. I think I did something wrong because I cooked the coconut jam too long.

Do you know what this is? It's chayote squash! From my mom's garden! My mom only has one vine, yet the squash keeps growing and growing. Mike decided that he wanted to grow his own squash and planted some seeds about one month ago. He told his grandma that he was going to grow chayote squash and she started laughing and exclaimed, "That's what we used to feed to the pigs!" Mike is now growing pig food in the backyard.
I decided to research chayote squash online and I did not realize how healthy it is. The fruit is low in Calories and high in folic acid, Vitamin C and potassium. Apparently you can use the leaves for tea to help lower blood pressure
I placed a cell phone next to the squash so that you can see how big they are.

Stay tuned, in the next couple of months we may have our own chayote squash from "Mike's Garden." Also, that means that we will start posting different chayote squash recipes!genkitummyhttp://www.blogger.com/profile/09623993826501338420noreply@blogger.com2tag:blogger.com,1999:blog-341575474618571406.post-77963040645240056372013-04-09T14:12:00.000-05:002013-04-09T14:12:00.284-05:00Boston's North End Pizza

Mike and I were excited when Living Social had a deal for Boston's North End Pizza. I remember enjoying the Garlic and Spinach pizza with the signature thin and slightly chewy crust.

We ordered of a garlic, spinach, and mushroom and the Big Read (tomatoes, spinach, garlic, mushrooms and tomato sauce). In reality, we just ordered two slices of each flavor. One slice is a quarter of a pizza.

Here's a close-up shot of the "Big Red"' pizza. My mom wanted this pizza. The crust was a bit too soggy and could have been due to the tomato sauce and the fresh tomatoes on the top. Next time, I would not order pizza with tomatoes on it. I don't think it adds much flavor and I'm not a fan of the texture of partially cooked tomatoes.
