SuperFood Challenge-Week 3 PUMPKIN!!!





Pumpkin in an appetizer. It can be a savory or sweet; fried or a soup: canned pumpkin or fresh pumpkin. Anything you want!




Pumpkin is a squash full of beta-carotene (an antioxidant) which is converted to Vitamin A (fat-soluble vitamin that is important for healthy eye health). One cup of pumpkin provides more than your Daily Value of Vitamin A and 10 grams of fiber. Dole Foods Pumpkin can be eaten year-round instead of only during the Fall season, so let’s get cooking!
