Curiosity Challenge 2~Fruit Cake/Bread

*I'm quickly typing out this blog as my wardon (a.k.a as mike) is making sure that I am completing work in my lab. He wants me to hurry up and graduate so he's making sure that I focus on my research*


Did you ever notice that banana bread, carrot cake, zuchinni bread, and pumpkin bread all have similar ingredients and spices?

Okay, so I was partially bored in the kitchen and was trying to clean out my fridge before I left Champaign for Hawaii and didn't know what to do with all this food in my apartment.

My base recipe was a carrot cake recipe. I don't like nuts in cakes (because of the soggy texture they acquire in moist desserts, so i omitted the 1 cup of walnuts). I also ran out of white sugar, so I ended up using some dark brown sugar to make up the difference.
I had whole wheat flour and no all purpose flour, so i ended up using a combination of whole wheat flour and cake flour.

Fruit and veggies I added to the cake recipe.
1 c. grated carrots
3/4 c. grated zuchinni
1/4 c. mashed previously frozen banana
1/4 c. pumpkin puree
1/2 c. crushed canned pineapple slightly drained

The final result. The cake was pretty good. i couldn't even tell that the cake was made out of whole wheat. I couldn't really taste all of the fruit, but it was a moist cake and the most dominate flavor was the pineapple. C. didn't care for it that much, and my mom didn't thought it was okay. I guess it's one of those foods that when you tell someone it's healthy, it increases the liking score.

yup, it was definitely a great way to use up the extra produce I had in my fridge!
