My second Daring Bakers challenge! This month's challenge was a danish braid filled with a homemade filling. What is a DANISH BRAID? It is a flaky bread-like pastry composed of laminated dough (layering of dough and fat. this results in a baked product with multiple flaky layers) containing yeast that has a filling. Oh and the final pastry looks like a braid because of the braiding of the dough prior to baking.
We were supposed to follow Sherry Yard's recipe from The Secrets of Baking. Thank you to Kelly of Sass & Veracity, and Ben of What’s Cookin’? for hosting this month's challenge! I decided to fill mine with pastry cream, and strawberry and apricot jams. See my strawberry jam. The overall consensus was that the danish braid was a success. I fed it to people in the lab so that I could share the wonders of baking (and Calories since I'm trying to maintain my figure for my August wedding) with everyone.
And, since I had extra dough, these are the other treats I made. While watching some videos on Youtube, I got inspired by other pastry creations.
**I am currently in New Orleans at the IFT conference, so I am pre-dating this post to make the DB June post date. I can't wait to see everyone's creations!
